RECIPE: Carrot Casserole

Do you need a simple and delicious dessert / veggie for an upcoming meal.  Search no further - we got you covered. 

Equipment

  • Two (2) 9"x9" pyrex pans
  • Mixing bowl
  • Pot to steam carrots / alt. put chopped carrots in covered pyrex dish and microwave

Ingredients

  • 2 cups mashed carrots
  • 3 eggs beaten
  • 1/2 cup sugar
  • 2 Tbs general purpose flower
  • 1/2 cup melted butter (1 stick) + extra butter for pan
  • 1/4 tsp
  • 1 cup milk
  • 1 tsp black pepper *(this will give it a kick.  reduce the amount for less kick.  and ideally use fresh ground if you want a zesty bite)

Procedure

  • Steam carrots until they can be mashed.  Typically ~45 min.  Can steam in microwave or on stove with a covered pot and a little water on the bottom
  • Pre-heat oven to 350F
  • Mix all ingredients in bowl 
  • Butter pan then pour ingredients in!
  • Bake for 35-40 min.  A test knife should come out wet but not goopy. There is lots of water so don't be worried about cooking a little extra. 
  • Let cook a bit then serve!
  • Store in fridge and reheat in microwave.
